Ingredient
- Brisket, I recommend 6lbs if you intend to serve about four people.
- Your favorite BBQ rub

- The night before grilling the Brisket, clean the Brisket and trim its surface. Remove the fat on the surface but do not remove it altogether.
- Wrap a clean brisket in a plastic wrap after applying your favorite BBQ generously.
- Season it with your favorite seasoning and keep the Brisket inside the fridge until the following day or 24 hours afterward. This is to enhance the texture after cooking it.
- The next day or after 12 or 24 hours, prepare for grilling by preheating and setting the grill to 225 degrees Fahrenheit. Confirm temperature with an oven thermometer.
- Place the Brisket on the grill, preferably the center of the grill, let it sit for about 4 hours, then turn the Brisket and watch for another 1 ½ hours.
- After this, confirm the temperature by inserting a probe in the meat. Once the meat temperature has reached 150 degrees Fahrenheit, remove the Brisket from the grill and transfer it into a foil.
- Next, cut a foil that is double the size of the Brisket so that you can quickly wrap it and cut another foil that is the size of the Brisket; you place this under the wrapped Brisket and leave a part open, this ensures that the foil does not stay glued to the grill and waste the liquid you will later need.
- Add your beef stock through an opening part of foil and seal again
- Return the Brisket back to the grill and let it cook for another 2 hours or until the meat temperature reaches 200 degrees Fahrenheit. Confirm doneness by inserting a fork into the Brisket without unwrapping the foil. If the fork goes in and comes out without any resistance, your Brisket is ready. However, if you notice resistance, cook till the temperature increases by another 5 minutes and check again.
